Terroir
Diamond Ridge Vineyard in the southern part of the hills, enjoys a maritime climate, long sunny days and crisp nights. Great flavour development and acid retention but also a good climate for structure. Patch of Grapes Vineyard lies close to the heart of the hills, is unusually elevated for this part of the hills, and the fruit tends to reflect a more cool climate – fresh, zesty, structured with good length.
Winemaking
100% handpicked, crushed and destemmed straight then gently pressed, fermented in stainless and 1-2 year old French oak (15%). Post ferment, partial malolactic, lees string 3 times per week for 10 weeks...this is what is driving the creamy, textured, moderate acid, nutty finish.
Nose
Fresh cut pear, fleshy lemon, white peach, spiced honey
Palate
Textural with baked apple pie, fresh cream, cashew nuts, peach and ripe lime flavour.
