Colour: Vibrant green and fresh attractiveness 

Aroma: Elegant pungent nose, with hints of grapefruit, pineapple, cashew and lime juice

Palate: A very flavoursome palate of great intensity, drive and length. Immediate signs of grapefruit zest, are followed by white peach and cashew, held together with minerally acidity. The mouthfilling palate shows lemon curd creaminess from 30% of the wine having undergone Malo-Lactic Fermentation. An excellently balanced wine with well-integrated high quality oak.

Process: After harvesting in the very cool early morning, the grapes were destemmed without crushing, direct into the press. Gentle pressing allowed extraction of the prime juice, whilst still maintaining the delicacy and elegance. Fermentation proceeded in stainless steel tank with about half of the solids retained until about the mid-point of sugar conversion, when the juice was then filled to French oak Hogsheads to complete fermentation. Lees stirring was performed weekly for 4 months, and 30% of the wine underwent Malo-Lactic fermentation. The wine was matured in the same oak barrels for 6 months before filtration and bottling.
