Cape Barren Native Goose GSM 2017

Colour: Bright light crimson hue
Aroma: Fragrant bouquet of raspberry bonbon, wild cherries, and attractive hints of anise and dried herbs. The use of whole bunch fermented Grenache adds an overlay of fresh vitality.
Palate: Supple and juicy, the palate is a heady mix of plum and cherry liqueur producing a medium bodied wine in the fresh red spectrum seamlessly couched in a savoury crosscurrent of fine tannins. The result is excellent flavour intensity of great length and purity
Varietal Composition: 60% Grenache, 20% Shiraz and 20% Mourvedre

Process: The 3 components were hand harvested and fermented separately in upright static 10t fermenters. 20% of the Grenache was whole bunch fermented and matured separately. The standard fermentations proceeded at about 20-24°C for 8 days, with juice being pumped over the skins twice daily. When most of the sugar had been converted, the wine was pressed, and pressings were added back to the free-run juice. The wine was then filled to a mix of French and American oak Hogsheads for maturation for only 6 months.
