Mostly destemmed, part fermented with whole bunches, 11 months in French oak puncheons (20% new). Stunning dark purple hue; laden with savouriness, spice and detail with dark fruit, pencil shavings, graphite and iron-shavings. The 500-million-year-old soils are integral to the distinctive characters in these special wines.= The Kirby family established Heathcote Estate with the sole objective to make one wine - a single vineyard shiraz. And over the past decade, the label has forged a reputation for wines of exceptional character and longevity. Led by winemaker Tom Carson, the philosophy is to craft wines that speak of the distinct characteristics of Heathcote and more particularly, this unique site. Heathcote Estate was established exclusively for the production of one wine a single vineyard Shiraz.
