2016 All Saints Estate Sangiovese Cabernet

All Saints Estate is one of the most spectacular vineyard settings in Australia. The entrance is lined by 120 year old elm trees that change beautifully with the seasons. The stunning landscaped gardens are a huge attraction, with a rose garden, ponds and gently undulating amphitheatres, which host many wine and food festivals, concerts and wedding ceremonies throughout the year. All Saints Estate also houses the renowned restaurant ‘The Terrace’, a cooperage and one of the finest private tasting facilities in Australia. The 'Family Cellar’ stores some of All Saints Estate’s oldest and rarest wines. A private tasting surrounded by the sleeping wines and the fragrant oak is truly an experience to remember.

Each variety planted on the estate whether new or old, traditional or modern, reflects their place in the world. Our most precious Shiraz, from an 80 year-old vineyard block on the banks of the mighty Murray, is very low yielding but produces incredibly intense fruit which results in a wine that is rich and full of flavour. All Saints Estate’s Marsanne block is the second largest planting of Marsanne in Australia and our Durif block yields a wonderful example of this little-known regional speciality. These wines make up our flagship Family Cellar range, comprising four wines of distinction – Chardonnay, Marsanne, Shiraz and Durif. The wines are made with as little intervention as possible to allow the distinct characteristics of our site and our vines speak as clearly as possible and to make elegant, complex wines of integrity and depth. These award-winning wines gather great reviews and new fans everywhere they go and are the pride and joy of owners, Eliza, Angela and Nicholas Brown.

The Estate range of premium varietal wines are made from estate grown fruit and deliver distinctive, high quality wines suitable for drinking now or medium-term cellaring. The range include whites such as Riesling, Chenin Blanc and unoaked Chardonnay and reds such as Merlot, Cabernet Sauvignon, Shiraz and Durif. The core range is regularly supplemented by delightful limited releases and member-only wines at our winemaker’s discretion.

The Range
Our sophisticated premium blends have plenty to offer the discerning consumer looking to try something new, yet approachable. Fruit driven with excellent balance and structure, these ready-to-drink styles are wonderful on their own and the perfect partner for a wide range of cuisines.

The Wine
We blend the best local Sangiovese (70%) with pristine parcels of premium Cabernet (30%) to weave the vibrant Cabernet notes of cassis and blackcurrant through the savoury undertones of the Sangiovese. Medium bodied red with a brick tinge at the rim, this wine displays aromas of red fruits with slight savoury and herbal notes. There is lovely soft, ripe fruit with good, almost tart, acidity in a balanced and dry finish.

Sangiovese is Italy’s most planted grape variety. Generally bright, spicy and lifted aromatically, often suggesting plummy, cherry, raspberry and strawberry fruits mixed with hints of roses and violets. Cabernet Sauvignon is originally from the Bordeaux region of France where it is a major component of traditional Claret. In Australia it is grown in most regions, ranging in from a full-bodied soft red in warm areas to quite lean and tannic styles from cooler spots.

Wine Making
We use very traditional techniques including hand plunging and long maceration in our open fermenters, basket pressing and then 12 months maturation in large tanks and old oak vessels before bottling. The intent is for the wine to develop savoury complexity whilst retaining plenty of food-friendly tannins.

Food matching
This is a very food-friendly wine and very versatile. It matched perfectly to popular Mediterranean cuisine and makes a perfect partner to dishes featuring tomato.

The wine is released with current drinking in mind but will benefit from a year or two in the cellar.
